July in Chicago is peak time for summer fruits - berries are diverse and plentiful, stone fruits are coming into play, grapes and melons are on farmers' market tables - not to mention all of the vegetables! Chef Nicolas Bacheyre will be here to teach you how to take full advantage of the bounty of the Midwest's growing season and apply it to your bakery case or dessert menu. The owner of Faldo & Co Patisserie will generously share his knowledge of tarts and gateaux - both sweet and savory. The season is fleeting - don't miss this opportunity!

For Your Information
- Class size is from 10 to 14 people
- A light breakfast will be served from 8:30 AM - 9:00 AM
- Class is from 9:00 AM to-5:00 PM, depending on the chef and the program
- Lunch and an apron will be provided

In the event of a cancellation by the Academy, we will refund only the amount of the course but not the travel or the accommodations (see the cancellation policy below).
Dress Code
- The Callebaut Chocolate Academy™ center will provide one apron for you to wear for the entire class and keep at the end
- You must bring your own chef coat
- Pants: jeans or solid color wear
- Socks and closed shoes are required to enter in the kitchen
- Long hair must be restrained
- Fingernails should be short

Cancellation Policy
- Cancel less than 15 days from the class date and you will not receive a credit or any form of refund.
- Cancel between 15-45 days and you will receive a credit voucher of 50% towards a future class.
- Cancel before 45 days and you will receive a full credit voucher of 100% towards a future class.
